🧂 Ingredients

  • 6 large pastured eggs

  • 3 oz (90 g) finely crushed pork rinds

  • 8 oz (230 g) ricotta cheese

  • 1 oz (30 g) melted butter

  • 1 tbsp gelatin powder (optional, adds structure)


👨‍🍳 Instructions

Step 1: Preheat & Prep

Preheat oven to 350°F (175°C).
Line a loaf pan with parchment paper or lightly grease it with butter.


Step 2: Make the Batter

In a large bowl, beat the eggs with an electric mixer until pale and fluffy.
Add crushed pork rinds, ricotta cheese, and melted butter.
Mix until fully combined.
While mixing, sprinkle in the gelatin powder for a denser, bread-like texture.


Step 3: Pour & Bake

Pour the batter evenly into the prepared loaf pan, smoothing the top.
Bake for about 1 hour, or until the top is golden brown and a toothpick inserted in the center comes out clean.


Step 4: Cool & Slice

Allow the bread to cool in the pan for 5–10 minutes, then transfer to a wire rack.
Let it cool completely before slicing for the best structure and texture.
